Leuconostoc Mesenteroides is a heterotroph. It is heterofermentative and is able to produce dextran from sucrose.

A heterotroph is an organism that requires organic substrates to get its carbon, which is needed for growth and development. Also, heterotrophs are unable to synthesize organic, carbon based compound alone from the inorganic environment's sources.

 

 

Beneficial Properties

 

Leuconocstoc Mesenteroides is beneficial to humans because it used to make a lot of the food we use, through fermentation. For example some food that it makes: cottage cheese, sauerkraut,sausage, yogurt, cheese, buttermilk, soy sauce, and pickles. Fermentation is an enzymatically controlled anaerobic breakdown of an energyin which organic molecules serve as both electron donors and acceptors. The molecule that is being metabolized does not have all its potential energy extracted from it; it is not completely oxidized. Fermentation works with any molecule that can undergo oxidation, such as L. mesenteroides. Also, L. mesenteroides it can tolerate relatively high concentrations of salt and sugar.L. mesenteroides can begin growth in vegetables more rapidly over a vast range of temperatures and salt concentrations, more so than any other lactic acid bacteria. It produces carbon dioxide and acids which rapidly lower the pH and slow the development of unwanted micro-organisms. The carbon dioxide produced replaces the oxygen, making the environment anaerobic and suitable for the developement of the species of lactobacillus. Removal of oxygen also helps  preserve the color of vegetables and stabilizes any ascorbic acid that is present. An ascorbic acid is a sugar acid with antioxidant properties.
