Recent studies performed, show that the better quality sauerkrat works if the cabbage is initially started with a strain of Leuconostoc Mesenteroides. Sauerkraut fermentations rely on selection of naturally occurring lactic acid bacteria. Leuconostoc Mesenteroides has proved to be beneficial towards the production of Leuconostoc Mesenteroides. There have been other experiments that show Leuconostoc Mesenteroides as resistent to the antibiotic vancomycin. It is a glycopeptide antibiotic used for the treatment of infections caused by Gram-positive bacteria. There are a few gram-positive bacteria that are resistant to vancomycin, which include, Leuconostoc and Pediococcus species, but these organisms are rare causes of disease in humans.
